Beef Stir Fry

Ingredients:

350 gr Sirloin steak 
1 shallot
1 carrot
2 tbs(tablespoon) cornflour
2 cm piece of ginger (peeled and finely chopped)
1 fresh red chilly
100 gr sugar snap peas 

Preparation:

Step1:-cut the steaks across the grain into 2-3 cm pieces and then each piece again into wafer-thin stripes (Fig1&2)

-mix the steak stripes with a pinch of salt and cornflour to coat the meat
Step2:-heat 3 tbs of cooking oil in a wok (Fig 3) and fry 5 min to precook and set aside (Fig 4&5)

-add again 3 tbs of oil in the same wok and add the mixture of finely chopped carrot, shallot, garlic, chilly and ginger (Fig 6)

Step3:-stir and fry them for 5 min 
-add the precooked beef to the veg mix together with the sugar snap peas 
(Fig 7&9)

-continue to stir fry until the beef is fully cooked and then add the sauce*
(Fig 8)

Step4:-give a final toss to coat all ingredients with sauce and serve
(Fig 9)

*Preparation of the Sauce:

Ingredients:
1 tbs oyster sauce
1tbs soy sauce
1/2 tbs sugar
1 teaspoon cooking wine
1/2 teaspoon of cornflour
1 dash of sesame oil
black pepper

Mix in a small bowl all the above ingredients(Fig 10)
